Healthy No-Bake Energy Balls

In my humble opinion, no-bake energy bites are the perfect snack. I am constantly on-the-go and I find myself having less time (and energy) to bake. However, I still favor homemade snacks over most store-bought alternatives, so anything labeled as “no-bake” is a win for me.

I first stumbled upon the concept of “no-bake” baking when I moved the United States 8 years ago. My mother-in-law made the most delicious no-bake cookies and since then, I’ve been hooked.

While no-bake cookies are a tasty treat, they definitely shouldn’t be an everyday indulgence. When I bought The Minimalist Baker cookbook on Amazon I discovered an incredible healthy no-bake cookie alternative, aka the humble energy bite. SO FREAKING TASTY, and healthy to boot.

Since then, I’ve made no-bake energy bites at least once a week.
